Low Glycemic Beef Chili!

Ingredients

12 oz extra lean ground beef
1 cup chopped onion
1 cup chopped bell pepper
2 stalks celery, chopped
1 1/3 cup canned red kidney beans, drained and rinsed well
1 1/3 cup chicken broth
1 cup salsa
1 tsp cumin
1 tsp chili powder
1 tsp oregano
salt and pepper to taste (but easy on the salt!)

Directions

In a large pot, cook ground beef, onion, bell peppers, celery, cumin, chili powder and oregano, over medium heat until the beef is no longer pink (approximately 10 minutes).

Add kidney beans, broth and salsa. Bring to a boil, then reduce to simmer, covered for approximately 15 minutes.

Low Glycemic Banana bread!

Ingredients

1 1/2 cups whole wheat flour
3/4 cup ground flaxseed
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 very ripe, medium bananas, mashed
6 tbsp SPLENDA® brown sugar blend
3/4 tbsp lemon juice plus enough skim milk to make 3/4 cup (or use 3/4 cup buttermilk)
4 egg whites
1 tsp vanilla
3/4 cup chopped walnuts

Directions

Preheat oven to 350 degrees. Spray loaf pan with non-stick spray. Measure 1 tbsp lemon juice (freshly squeezed is best) into a measuring cup and pour in skim milk for a total of one cup. Do not stir. Allow to sit for 5 minutes. Alternatively, you can simply use 1 cup of buttermilk if you have this ingredient on hand.

In a large bowl, blend flour, flaxseed, baking powder, baking soda, cinnamon and salt and set aside.

Beat egg whites and sugar. Add bananas and vanilla and beat lightly.

Pour wet ingredients into dry ingredients and combine until well mixed. Add walnuts and stir until combined.

Pour mixture into loaf pan and bake 40 to 50 minutes

The purpose of this site is to give people continual resources and guides to low glycemic recipes so they can live healthier lives, it’s that simple. Many people in my life either need gluten free or low glycemic foods and after researching the web I thought I would create this site ti helps folks find the best foods and recipes out there.

I found that there are many sites out there but it’s hard to cut through the clutter and navigate some of the sites, so I thought I would try and simplify the process for everyone.
